Chicken & Fruit Kabobs with Mustard-Leek Sauce

These chicken and fruit kabobs combine juicy chicken with sweet bananas, peaches, and plums for a fresh, colorful meal. Finished with a tangy mustard-leek sauce and a touch of curry, they are a light and flavorful option for grilling or broiling.

Ingredients
  

Chicken & Fruit Kabobs Ingredients
  • 1 lb boneless, skinless chicken breast
  • 2 small bananas
  • 3 medium peaches, pitted
  • 3 medium plums, pitted
  • Vegetable cooking spray
  • 1 tablespoon of curry powder
  • Mustard-Leek Sauce (see below)
Mustard-Leek Sauce Ingredients
  • 1 cup leeks or green onions and tops
  • 2 teaspoons of olive or vegetable oil
  • 1 cup chicken broth
  • 3 tablespoons Dijon-style mustard
  • 2 teaspoons distilled white vinegar
  • ¼ teaspoon curry powder
  • ¼ teaspoon freshly ground pepper
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • 2 tablespoons Equal Spoonful

Method
 

Chicken & Fruit Kabobs Directions
  1. Prepare grill for cooking or preheat oven to broil.
  2. Cut chicken into 1″ pieces and cut banana, peaches and plumbs into 8 pieces.
  3. Thread chicken and fruit on 16 small wood or metal skewers.
  4. Spray kabobs with cooking spray and lightly sprinkle with curry powder.
  5. Grill kabobs over medium coals or broil 6″ from heat source until chicken is done, turning once after 3-4 minutes. This takes about 6-8 minutes.
  6. Arrange kabobs on serving plates and spoon Mustard-Leek Sauce over them.
Mustard-Leek Sauce Directions
  1. Start by sautéing leeks with oil in a small saucepan until tender.
  2. Stir in chicken broth, mustard, vinegar, curry powder and pepper. Heat to boiling.
  3. Mix cornstarch and water into boiling mixture. Stir consistently until thickened (about 1 minute). Remove for heat and let stand for 2-3 minutes. Stir in Equal Spoonful.
  4. Spray kabobs with cooking spray and lightly sprinkle with curry powder.
  5. Grill kabobs over medium coals or broil 6″ from heat source until chicken is done, turning once after 3-4 minutes. This takes about 6-8 minutes.
  6. Arrange kabobs on serving plates and spoon Mustard-Leek Sauce over them.
