Chicken Cacciatore over Pasta

Ingredients

  • 1 lb boneless, skinless chicken breasts halved
  • 1/2 chopped onions
  • 1/2 cup chopped green bell pepper
  • 1 16oz can chopped tomatoes, drained
  • 1 8oz can tomato sauce
  • 2 tablespoons Splenda No Calorie Sweetener, Granulated
  • 1 1/2 teaspoons Italian seasoning
  • 1/3 cup sliced ripe olives
  • 1/8 teaspoons black pepper
  • 3 cups hot cooked noodles (or any favorite pasta), rinsed and drained

Directions

  1. Slice chicken breasts into pieces.
  2. In a large skillet, spray with olive oil flavored cooking spray. Saute chicken, onion and green peppers for 6-8 minutes. Stir in drained tomatoes and tomato sauce.
  3. Add Splenda, Italian seasoning, olives and black pepper to the pan. Mix well and lower heat to simmer for 10-15 minutes, stirring occasionally.
  4. For each serving, place 1/2 cup pasta on a plate and spoon 2/3 cups sauce over the top.
  5. Serve immediately.
