Fresh Tomato Herb Spaghetti Sauce

A fresh tomato and feta mixture with red onion, basil, garlic, and oregano, tossed in olive oil and left to rest so the flavors meld—perfect for hot pasta or bruschetta.

Ingredients
  

  • 2 cups fresh seeded tomatoes*
  • cup finely chopped red onion
  • ¼ cup chopped fresh basil
  • 2 tbsp olive oil
  • 1 tbsp Equal® Spoonful or 1 1/2 packets of Equal sweetener
  • 1 tbsp chopped fresh oregano
  • 1 teaspoon minced fresh garlic
  • Salt and pepper to taste
  • ½ cup (2-ounces) crumbled feta cheese

Method
 

  1. Mix the tomatoes, red onion, basil, olive oil, sweetener, oregano, garlic, salt and pepper until well blended.
  2. Let mixture stand at room temperature about 30 minutes to allow flavors to blend. If making ahead, store, covered, in refrigerator until ready to use.
  3. Just before serving, stir in feta cheese. Toss with hot cooked pasta or use on toasted Italian bread for bruschetta.

Notes

To seed tomatoes quickly and easily, cut tomato into quarters. Squeeze each piece gently in hand; seeds will come out.
