Apples and cinnamon muffins

High Fiber Muffin

Ingredients
  

  • 1 ¼ cups rolled oats (oatmeal)
  • 1 cup oat flour
  • 1 cup chopped apples (no skin)
  • ½ cup unsweetened applesauce
  • cup bran
  • ½ cup chopped walnuts
  • 1 Tbsp. cinnamon
  • 1 Tbsp. baking powder
  • 1 tsp. baking soda
  • ½ cup skim milk
  • ¼ cup olive oil
  • ¼ cup sugar or agave
  • 2 eggs or 4 egg whites or 1/2 cup egg substitutes

Method
 

  1. Heat oven to 400°F (205°C).
  2. Use butter spray in a 12-muffin tin.
  3. Mix all the ingredients together.
  4. Bake in oven for 15-20 minutes or until brown.
