Chili Rellenos with Sweet Pepper & Onion Sauce

These stuffed chili rellenos are filled with a savory chicken, corn, celery, and cheese mixture, then cooked until tender and served with a sweet-and-savory pepper and onion sauce for a colorful, flavorful meal.

Ingredients
  

Chili Rellenos Ingredients
  • ½ cup sliced celery
  • 1 cup fresh or frozen but thawed whole kernal corn
  • 1 clove of garlic, minced
  • 1 tablespoon of vegetable oil
  • 2 cups or 12 oz shredded, cooked chicken breasts or lean meat
  • ½ cup or 2 oz shredded reduced fat, Monterey Jack cheese
  • Pinch of Salt
  • Pinch of Black Pepper
  • 8 small 2oz poblano or green peppers
  • Vegetable cooking spray
  • Sweet Pepper and Onion Sauce (see below)
Sweet Pepper & Onion Sauce
  • 1 cup thinly sliced red peppers
  • 1 cup thinly sliced yellow peppers
  • 1 cup thinly sliced green or black peppers
  • 1 cup thinly sliced onion
  • 2 small cloves of garlic, minced
  • 2 tablespoons olive or vegetable oil
  • 2 tablespoons dark raisins
  • ½ teaspoon chili powder
  • 1 ½ cups chicken broth
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water
  • 1 to 2 teaspoons white distilled vinegar
  • Pinch of Salt
  • Pinch of Black Pepper
  • 2-3 tablespoons Equal Spoonful

Method
 

Chili Rellenos Directions
  1. Saute celery, corn and garlic in oil in a medium skillet for 3-5 minutes. Stir in chicken and cook for 2-3 minutes. Remove from heat and stir in cheese, salt and pepper.
  2. Cut stems from top of peppers and remove seeds, leaving the peppers whole, Fill peppers with Chicken mixture.
  3. Spray large skillet with cooking spray and heat until hot. Cook peppers on medium heat until dark brown on all sides. Reduce heat to low and cook covered until peppers are tender – about 5 minutes.
  4. Remove from heat and serve immediately with the Sweet Pepper & onion sauce.
Sweet Pepper & Onion Sauce Directions
  1. Saute peppers, onion and garlic in oil in a large skillet until tender. Stir in raisins and chili powder, cook for 1 minute. Stir in chicken broth and heat to boiling.
  2. Mix cornstarch and cold water; stir into boiling mixture. Cook over medium heat until thickened. Add vinegar, salt and pepper for taste. Remove from heat and cool 2-3 minutes. Stir in Equal.
