September 28, 2008 was the worst day of our lives. We were the perfect family. I am a working mother and we are fortunate that my husband can be a stay at home father. We have a beautiful only child named Noah (in honor of my love of animals). Great life. Great home.

I was diagnosed with type II diabetes after my first doctor told me it was just stress and thyroid making me tired. My new doctor took my blood sugar and the reading was in the high 400s.

Easy Baked Stuffed Apples

Ingredients

  • 4 small apples
  • 1 tsp butter or margarine
  • 2 tbsp Equal Spoonful
  • 1/3 tsp ground cinnamon
  • 1/2 tsp lemon juice
  • 2 tbsp finely chopped dates

Directions

  • Remove apple cores leaving 1/2″ at the bottom of each apple and prick skins with fork. Set aside.
