    Easiest Hummust Ever

    3 cloves Garlic
    1 can Garbanzo beans (15.5 oz) (drained, but save the liquid)
    2 Tbl. peanut butter
    2-3 Tbl. lemon juice
    1 Tbl. chopped chives or a pinch of asafetida
    parsley (about 2 Tbl. chopped)
    scant 1/3 cup EVOO
    (if your lemon juice is fresh, a tsp. or two of lemon zest is nice)
    big pinch of salt

    Peel the garlic cloves. Pulse them in the food processor until they are chopped very fine.

    Add in everything else except the oil and fresh herbs). Pulse until it's a paste.

    Now slowly add in the oil while the food processor is running. Add the herbs at the last few pulses.

    Note: if you like, you can chop the herbs with the garlic, then they will totally emulsify into the hummus.

    That's it.

    I smear it on the inside of a whole wheat pita bread. Add roasted red bell pepppers Add som sprouts (usually mung bean and pumpkin seed). Then I cut each half into thirds.

    Each piece makes a great little mini meal.
