    A friend introduced me to this recipe and I adored it right away. It's supposed to be a side dish for some sort of meat, but I find that I like it chilled on a hot day with a cool salad with it.

    It's very easy to make (VERY EASY) and you can whip it up to impress company if they just show up.

    It's only about 160 calories per serving (This makes four servings) with over 51 mgs of potassium. And with all the good news there is about eating nuts lately, this wonderful dish is totally healthy too!

    Almond Rice

    2 tsp olive oil
    1/2 cup slivered almonds
    1 tbsp amaretto (or any almond liqueur)
    2 cup cooked white rice
    1/4 cup scallions , minced

    Heat oil in skillet, add almonds, and saute just until golden. Add liqueuer and rice to skillet. Stir until heated. Add onions; stir to mix well.
